A decent list:

Logged time:
Diamond C1 Eclipse (my primary training airplane...a real spoiler!)
C152
C172N

Unlogged time:
C-130H (10 minutes over Saudi Arabia)
Boeing 727 (engine run and taxi qualified as A&P)

Simulators:
C-130E (during engine run school)
DC-8
A-10 (gee CJ5...also as a CAP cadet in the mid-eighties)

How about interesting ride-alongs?:
KC-10
KC-135
C-47 (with the Airborne Reenactment Group in Frederick, OK)
C-5B (on my way to the Great Sandbox)
727 (rode jumpseat on a couple of F/O upgrade flights)

No PPL here, but I've got 1 hour bootleg on a T-tail Bonanza, and three hours or so in a C-150.  Two 6' 2" guys jammed into a 150 isn't comfortable.  It was still fun.

One 6'2" guy in a 150 is too much.  I'm 6'0", and had a student that was 5'10" or so.  We overloaded the 152 trainer with full tanks.

If the driver needed the yoke, I had to put my feet on the rudder pedals, and vice versa.  Once we got up, and he got the throttle where he wanted it, I could splay me knees a bit.  There wasn't a full tank, but we must h ave been near the limit.

Ditto question.  I have 60 or so all in various C150/C152 and no low wing.  So, what kit am I looking to build?  A low wing Zenith Zodiac XL!

Speaking of Cessna 150/152s I heard a new excerpt online of Rod Machado's lectures (from his website) and it mentioned maneuvering speed and safety and asked if people there knew their plane's speed and what power setting was needed and he said it varied from plane to plane, and with weight, but it was easy in a Cessna 150 because even with full power you're still under max maneuvering speed lol. Another earlier joke of his on the topic was a C150 pilot calling ATC asking if they had a ground speed reading on him, and the ATC answered: just barely lol.

How do those kitplanes mentioned fly compared to a smaller Cessna for instance? Is it more unstable or does that vary from design to design as I would expect?

Depends on how well they're built. :D

Like Gulfstream Driver said - depends!

The Zodiac XL should be roughly comparable.  It should be a little faster and more responsive, so it will be a little more challenging to fly.  But it's still a fairly stable design, assuming it's well built, and by all accounts makes for a great Light Sport Aircraft (and since I'll be going for a Light Sport Pilot's license - it'll be a good match :) .  My plan is to build it well, of course!   :o

But first I'll go to the work shop and make sure I can build it well!

What I have flown

Piper Warrior (unlogged)
Piper Cherokee(unlogged)
Pretend Flight In a Lancaster Bomber. (It was stuck to the plinth at the time, so it had problems getting airborne!!)
C 172 Alot of training in that one
N.A. Harvard (Texan) for about 20 minutes. I took control, and was able to log the time!
C 180 float plane. Float flying is fun!!

My first official lesson or lesson #1 was in C-172 on 9/11. Regardless to say, I didn't go up that day. Even  here in Canada, our airspace was closed for the week. I was in Thunder Bay at the time, and there was alot of static airplanes at the terminal.
IF YOU CAN'T SAY ANYTHING NICE, YOU'RE PROBABLY AT THE ICE CAPADES
