Here is a video of Philadelphia approach (tracon) gives you and idea of what a typical day is for an ATCer. They do a runway change, however they dont do it the way we do, but I guess they'd have their own SOP's for it etc. Kinda interesting if you look in the bottom left of the screen you can see the holding pattern while they change runways. This is only the approach/overflight side it seems, as I cant see any departures on there. They typically will split departures and arrivals, and approach will be split into 3 sectors. Two feeders, and then a final controller.
