Title: Your favorite gloomy weather comfort food......
Post by: BrianGMFS on November 21, 2006, 01:55:37 AM
On a dreary rainy day (like today was) I like to sit down with a grilled ham and cheese sandwitch and a mug of Campbells tomato soup for lunch......

Hits the spot ;)

Other than I generally use a certain noodle soup, I gotta agree with the combination.

Y'all are making me crave a homecooked meal.   :p

Actually, that really doesn't help since I had to leave the folks place just before thanksgiving!

I prefer tomato soup and a grilled cheese sandwich.

A crap-tastic day requires a large heaping bowl of a screaming hot chili.  For all you Texans out there, chili MUST contain beans.

Being new and all that, I hate to disagree so early.  Having thrown out that disclaimer, I'm going to have to shudder and say "No!"  Nutella?  C'mon...  (Just kidding.  Sort of...)

Fireflyr, my motto regarding hot food is:  "If I'm not crying, you're not trying!"

I've always held that chili contains beans.  But I also think a hearty helping of beef can do wonders, then some saltine crackers and you're set.

There's one Based at BTV that we work on a bit... The gentleman who owns it is a bit, shall we say "accident" prone. He has been known to taxi over taxiway lights on occasion, resulting in prop and engine overhauls. Of course you cant see over the nose of a Helio when it's flying, let alone on the ground   ;D

Hmmm...  that sounds like job security, anyway!!   ???   ;)

I've never been in one.  They look like some serious fun.   ;D

Hope you are staying warm there...  you may have to resort to that tomato soup and grilled cheese sandwich for comfort, if not!  (I agree, by the way -- that's a GREAT combo for lunch on a cold, dreary day!)

Of course, ANYTHING is good if I don't cook it.   ;D   ;D

Haha! No worries at all!
I usually tend to chose sweet things, but when it comes that I've to cook (and I lately have, since I'm living by myself now :)   ) I usually chose to cook easy things. something I like is tuna: I mean, not the canned one, the fresh one. one minute one side, one minute on the other in a pan with just a little bit of olive oil and pepper. and it's ready to serve. but...the good thing too, is that I've discovered that - after all - I'm not soooo bad in the kitchen, since I was able to perform a roastbeef lately ;)

I agree with you. but fish in general is good and it's healty too.
Yesterday, BTW, I went to a shop here in London and found a fresh made fish soup. I was appalled, since it seemed to be a really tasty one. I bought a quite big package, so that until tomorrow (if it's still eatable and I hope so! there is no expiry date) I've it. when I paid for it, I decided that even if bad, it had to be good. I was shocked by the price, since it reflected the london's salary and it was like two people going to the restaurant and eat two dishes each. Luckily enough, it's really really gorgeous and tasty. I've to see if I can find the recipe, since I'd like to post it in the forum. it's awesome.....

Hoho! thanks for the remark. I sometimes get mistaken on the use of terms and I hope you will excuse me, but lately it happens with a certain frequence. I must be quite tired (actually i'm just waiting for vacations!)! :)

I meant - actually - that I got curious and thought it could have been a good idea to taste it! Sorry! :)

No apologies necessary, your command of the English language (converted to Yankee) is great and the occasional mistake is really very charming ;) ;)
And be sure to get the recipe or description of the soup---I love soup recipes for fish 8)

No apologies, Hap.  Your English is better than a lot of Americans'.  Just thought I should point that one out, since it was the exact opposite meaning that you were going for.   :D  Now you can speak very much gooder.

Yea, I dont know where it is, i havent heard of it, and i've spent quite a bit of time in seattle in restraunts.  Space Needle, Ivars, Stanly and Seaforts, The Crab Shack, and some really expensive place on the tacoma water front that i went to for my senior prom.

It was 1983-5, I think they call it skid row (?) --the ferries dock there (I guess they dock a LOT of places) :P
Thanks for looking, it was a really great restaurant.  I was a cargo pilot at the time so I could only afford it about twice a month.  They really knew the chemistry of flavors and their sauces always tasted of rich fresh herbs.....MMMMM (insert fat smiley, smacking lips)

And you could get a 3 dollar bottle of Vino de Tavola (Guessing at name--been 20 years) which was a full body red that on a bad day would pucker you up and on a good day, only gave ya heartburn ::drinking::

I'm going to go out on a limb and guess that the place you're talking about now goes by the name "Trattoria Mitchelli".  On Fridays and Saturdays, they're open until 4am, which helps.  The food is good too.  It's on the north side of Yessler Ave, which is the old skid road, about 100 yards to the south east of the ferry docks.

Sounds like an evolution of the place in about the right area 8)

Hey Happy, did you ever figure out a taste discription or a recipe for that fish soup mentioned above ???

even though it's summer and quite hot, I probably found the recipe I was looking for. just have it and when it will be winter again you can add it to your kitchen!

Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
                        Soup:
   2      Pounds        fish bones,
2      Pounds        lobster bodies -- no outer shell
   1      Pound         fish scraps
   2      Tablespoons   olive oil
     1/8  teaspoon      Salt
   1      pinch         pepper
1      Medium        onion -- skin on, cut into ch
   1                    leek -- sliced
1      stalk         celery -- thinly sliced
1      small         carrot -- peeled thinly sliced
4      cloves        garlic -- cut in half
   1      cup           white wine
   1      cup           tomatoes -- chopped
1                    orange -- skin and pith remove
     1/4  cup           Pernod
   5 1/2  tsp           fennel seeds
   6      sprigs        parsley
   1                    bay leaf
   2      tsp           Spanish paprika
   1      pinch         saffron
                        Garnish:
   1      sm            baguette
     1/2  cup           aioli
   1      tsp           cayenne pepper
   2      tsp           paprika
   4      oz            grated Gruyere cheese
   2      tbsp          chopped Italian parsley

Preheat oven to 450 degrees. Spread the fish bones, lobster bodies
and fish scraps on sheet pans. Drizzle with olive oil
and season with salt and pepper. Toss well. Roast for 30 minutes or
until all the fish parts are golden brown. Meanwhile, heat 1 tablespoon olive oil in a large stock pot.
Add the onions, leeks, celery, carrots and garlic and cook over high heat,
stirring occasionally, until the vegetables begin to brown.
Add all the fish and the white wine. Reduce by one third.
Add the remaining ingredients to the stock pot
and add enough water to just barely cover the bones
. Bring to a boil, reduce to a simmer and cook 40 minutes
Puree, bones and all in the food processor in batches.
Strain through a coarse china cap. Taste for seasoning. If the soup
seems too thin, return to stove and reduce.
Slice the baguette in 1/4-inch slices and toast until golden
Mix the aioli with the cayenne and paprika. It should be spicy.
To serve, pour the soup into hot bowls and serve with the croutons, rouille,
grated Gruyere cheese and chopped parsley on the side.

Right now I would be looking for something lighter! :-)

I do with a cup of Lemon Balm http://en.wikipedia.org/wiki/Melissa_officinalis (http://en.wikipedia.org/wiki/Melissa_officinalis)
Perfect to take the edge off on a gloomy day

This topic is old but I have to share one with you. I do most of my activities outside so when the wheater is bad, I have to find something to do inside. This is my personal favorite bad wheater recipie. Take a long time to do and so delicious.

Preparing the ingredients:

You start with a duck, cut it in 6-7 pieces. Put it in a cookingware of a size that will keep the duck pieces squeze. Add 2-3 large table spoons of duck fat. Oven at 225-250F, uncovered for 3 hours. When done, remove duck parts.
- Put the liquid fat in a separate container.
- Remove the meat, cut it in chunks.
- Put bones, skin, neck, liver, heart in a large pan. Add 8-10 cups of water, garlic, herbs, carrot, oignon and boil slowly for 2-3 hours. 10 minutes before the end, add 4 large sausages in the broth. Filter the broth and put aside broth and sausages. The broth will contain a lot of fat. You want to remove this fat and have a "lean" broth. The best way to do it is to put the broth outside if in winter or in the freezer for the fat to freeze and being removed easy. Add this fat to the fat you already put aside.

- Grill the sausages in 2 tbs of duck fat for a few minutes. Cut all sausages in 5 pieces.
- Cut a full package of raw bacon in cubes.
- open, rinse with fresh water 5 cans of large white bean.
- cut 3 carrots in large pieces
- cut 2 oignons in pieces
- Put 1tbsp of tomato paste in 5 cups of the broth and mix.

Building the "cassoulet"
- rub a large cooking pot, with 3-4 garlic. Leave the garlic in it.
- Throw a few bacon cubes in the pot (about the equivalent of 3 slices).
- Add 1 tbsp of duck fat
- Add one can of white bean, add a hand full of bacon, duck chunks, sausages. A few carrots, oignon, garlic, origan, basilic, thym, pepper. Repeat until all ingredients are in but finish with a can of white beans.
- Add enough broth to cover half of the top layer of beans
- Add 3 tbsp of duck fat on the top.

Cooking the "cassoulet"
- Uncovered, 400F for 3 hours. Each 30-45 minutes, use the back of a spoon to plunge the fat layer that will be on top.
- Do not use salt until almost the end of cooking and only if needed after tasting.

HINT: You should have plenty of fat left. I keep it in the fridge and use it for cooking instead of butter.
